Pulled Pork

I can't take credit for this receipe, I got it from here. But I do love good pulled pork.

7 lbs. pork shoulder (bone in)

1 cup dark brown sugar

¾ cup salt2 tbsp. chili powder

2 tbsp. cumin

1 tbsp. red pepper flakes

½ tsp. cayenne

Directions:1. To make the rub, thoroughly mix together the brown sugar, salt, chili powder, cumin, red pepper flakes and cayenne.
2. Pat dry the pork shoulder and then liberally apply the rub to all sides. Place in a leak-proof container. Cover and refrigerate for as long as 24 hours, or as little as overnight. It will give up a cup or more of liquid so make sure your container is big enough to prevent spillage.
3. Remove the shoulder from refrigerator, brush off any excess or caked on rub. Move to a clean roasting pan with the fat side up.
4. Heat the oven to 275F. Place in the oven and let roast for 9 to 10 hours. Yes, I’m serious about it taking that long. After about 3 hours, there will be enough fat rendered to allow you to baste the shoulder every 1 to 2 hours. With a large spoon simply pour the rendered fat over the shoulder.
5. You will know it’s ready because the outside of the shoulder is extremely dark, nearly burned looking. The pork should pull easily from the bone and the fat/skin on the top should be nearly crispy.
6. Remove from the oven and let rest for at least 30 min. Using a pair of forks or very clean hands pull the pork away from the bone. This should be very easy to do.

Not really recipes

This post is not really recipes but more about ideas. The picture above is beautiful, so that is why I am posting it. Chef salad with deep fried bacon and garlic bread. The deep fried bacon is not something I think I will ever do again, but hey I saw it on a blog and thought I should give it a whirl.

Beer Butt Chicken

Simple but delicious. Cook your chicken on a beer can on the barbacue. Takes about two hours but is oh so nummy!

Schnitzel

Oh my gosh! This pork is the moistest I have ever had!

Schnitzel
6 thin cut boneless pork chops.
Pound them out as thin as you can.
Then coat them in flour, dredge them in eggs, and coat them in breadcrumbs.

Heat oil in a cast iron skillet until the oil is just about boiling.
Place the pork chops into the skillet and cook about 3 minutes per side.
The pork chops will be golden brown.

Guys I am not kidding you these things are good!

Navajo Taco's

Well in this family there is definatley two groups when it comes to Navajo Taco's. The sweet side and the not so sweet side.
Sweet
Brown ground beef, drain. Add seasonings(pepper, garlic pepper) Mix in Chili sauce (this in a family recipe that I will post in another post) The sauce is a tomatoe sauce similiar to salsa.

Not so sweet
Brown ground beef with chopped onions, season, drain add a can of pinto beans and a jar of salsa.

I make these ahead and keep them warm in a slow cooker.

Fry bread.

Rhodes rolls, raised and then flattened to about 6" circles.

Then deep fry them until golden brown.

Top with your choose of toppings.
Today we had
Tomatoes
Onions
Lettuce
Cheese
Sour cream
Salsa
Olives.

Simple, and when my mom requests these for her mothers day dinner, they must be good.

Maines B-day Dinner

Jahmaine wanted "those chicken things I made for Alisah's dinner" and "those really good potatoes with cheese" and because I insisted on a vegetable, raw carrots. So there you have it.
Those chicken things I made for Alisha's birthday (BBQ Chicken made in a slow cooker)

I used chicken breasts and legs. Then you have to have a BBQ sauce to cook them in.

Almost homemade BBQ sauce ( I doubled it)
1 bottle BBQ sauce ( I used Kraft Original because that is what I had) but any kind will do.
1 jar of honey
1 onion finally chopped (OK I admit I bought the onion from Walmart already chopped)
about a half a cup of brown sugar
about a half a cup of white sugar
and spices
about a 1/2 a teaspoon of garlic powder, and onion powder
about a teaspoon of chili powder and paprika
and about 2 tablespoons of Johnny's seasoning.

Mix all the ingredients together and coat the chicken. Place is the slow cooker on low for about 8 hours.

those really good potatoes with cheeseI call them "yummy potatoes" but most people call them funeral potatoes. Whatever!

1 large package frozen hashbrowns (thawed)
2 8oz packages of cheese ( I used on of mild cheddar and one of Colby Jack.
1 can of cream of anything soup (I used cream of potato, but kind will do)
1 stick butter
1 16 0z package of sour cream.

Melt the butter in the microwave. In a large bowl mix the butter with the soup and sour cream,
add the potatoes and 1 package cheese. Put in a casserole dish, cover with foil, cook at 350 for about 45 minutes. Take out of the oven, remove the foil and add the remaining chees on top. Cook until the cheese is melted and the pototoes are kinda bubbly.

Raw carrots not so much

There you have it a feast fit for a 7 year old.
